Here, in the Kona District of Hawaii (the Big Island), farmers have been growing the world's premier coffee for more than 160 years. The rich volcanic soil of the slopes of Mauna Loa, and the afternoon clouds that naturally shade the coffee trees, combine with the ample rainfall to provide the perfect growing conditions for coffee of unequalled aroma and taste. Here, above the blue Pacific Ocean, is McClure Coffee Farms.

We continue what nature started and provide all the essentials for great coffee in the most natural way possible. We cultivate without pesticides or irrigation, with only nominal use of herbicides on weed areas, and use a permanent, mowable ground cover to provide great mulch to enhance our fertilizing regime.

In harvest time, from September through January, our reliable pickers pick only the red fruit at the peak of ripeness. At the end of each day the fruit is inspected, then pulped to remove the flesh, meticulously washed, floaters removed, and then the remaining "parchment" is sun dried for a few days to start the drying process, and then moved to our finish dryers. Through a special process of blowing progressively dryer air through the parchment, the moisture in the bean is reduced to about 12%. This method of processing is unique and provides optimum conditions for the most flavorful coffee. The resulting parchment coffee is hulled to remove the parchment, and any defective beans (broken, small size, etc) removed. The green beans are then passed through a sizer screen to calssify all the beans by size (1/64 inch separations), and the peaberry separated out. This provides for even roasting of similar size beans.

Brewing Coffee
To brew the best tasting coffee it is necessary to start with top quality coffee, like McClure Farms 100% Kona freshly roasted. No matter how careful you are in brewing, lesser coffees cannot be made to have top flavor. To get the most out of your beans it is best to observe the following suggestions:

Storage of Fresh Roasted Beans
1-6 months: in freezer in closed container; 0-1 month: in refrigerator in closed container

Storage of Ground Coffee
0-2 weeks: in refrigerator in closed container

Storage of Filter Paper
Away from kitchen food odors

Grind Coffee for the days use only
Use tablespoon of ground to 8 ounces of water (bad tasting water makes off-flavor coffee). For stronger coffee use more grounds with the 8 ounces of water

A French Press coffee maker (using a coarser grind than for a drip coffee maker) makes the most outstanding brew, but you can get great results with a drip coffee maker also.

Run the drip coffee maker water through the grounds in two-three minutes for fine grind and six-seven minutes for regular grind. If your coffee maker is slow to pass the water through then make fewer cups at a time (e.g.: 4 cups instead of 8 cups), or (e.g.) double the amount of grounds of coffee and after brewing dilute with a like amount of water.

The rationale for the time of brewing has to do with the extraction of the good-tasting parts of the coffee bean and leaving the bitter and woody-tasting fraction in the grounds.  Thirty per cent of the bean will dissolve and go into your cup if you brew it long enough, but only the first twenty percent contains the desirable coffee flavors, and the last ten percent the bitter tastes.  Fortunately the twenty per cent of the aroma and body of coffee dissolves first in the hot water, and tests have shown that time and fineness of grind are the determining factors.

Kona Coffee Festival Coffee Cupping Contest

Each year in November Kona hosts a major Cupping Contest, with nationally recognized judges, to determine the best Kona coffee of the year.

Fifty to 75 of the top farms enter this contest. We have been placed among the finalists (in the top twelve) six times! In 1995 we gained fourth place, and in 1997 second place, and in 1998 again gaining fourth place. We are very proud of this achievement. 


Fran and John McClure not only supervise, but do the hands-on cultivating, pruning and processing of their coffee.
